Peanut Butter Sandwich Cookies

Last week on Twitter, I announced it was National Peanut Butter Lover's Day. We love peanut butter around here and I am sooo thankful no one in my family is allergic to it!!

This is one of my most requested recipes and I just had to make them for the day of recognition.


Peanut Butter Sandwich Cookies

For the cookie:
1 c. butter flavored Crisco
1 c. creamy peanut butter
1 c. granulated sugar
1 c. brown sugar
1 t. vanilla extract
3 large eggs
3 c. self-rising flour (or 3 c. all purpose + 2 t. baking soda + 1/4 t. salt)
For the filling:
1/2 c. creamy peanut butter
3 c. confectioner's sugar
1 t. vanilla extract
milk to desired consistency (I used 7 Tbsp)

In a mixing bowl, cream the shortening, peanut butter and both sugars. Add vanilla. Add eggs, beating after each addition. Slowly add flour to mixture. Shape into 1 inch balls and flatten with a fork. Bake at 375 for 7-8 min or until golden brown. Cool completely.
Beat the ingredients together for the filling. Once the cookies are cool, spread the filling on the flat side of one cookie and "sandwich" it with another cookie (the bottoms of cookies are inside with the fork pressed design on the outers.)
