Now that we got that out of the way, let me just say that I vow to do at least one project that I've pinned every week....after school ends. Technically, I think I am doing it anyway but I have commitment issues so I don't want to completely commit until beginning of May.
One more thing you should know about me - I love to try new recipes. I will try dozens or more of the same thing until I think I have found or tweaked or completely designed from scratch, the absolutely best of whatever it is. I do have the best carrot cake. No kidding. And the best banana nut bread. But I have not yet found that over-the-top pancake recipe.
I will admit that I am the type of person that seldom makes plain pancakes. I always add something in it. Usually I make a pancake bar, make a base batter and then everyone adds in whatever they want.
But sometimes you need a basic buttermilk recipe. You know so when you have company and they decide to just run up to McD's for pancakes you can insist that you will just whip up a batch that's even better. And it is.
I think I have found it. I pinned it awhile back to my It's All About Food Pinterest board from Chef in Training's website. Amazing food blog by the way, go check it out sometime. Not now, silly, after you've spent an hour or so here first.
2 c. all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 Tbsp. white sugar
Sift dry ingredients together. Now add wet ingredients:
3 c. buttermilk*
4 Tbsp. melted butter
* If you don't have buttermilk, use regular milk and add 1 Tbsp. of lemon juice or white vinegar. Let sit for about 5 min until milk sours.
1/2 c. butter
3/4 c. white sugar
1/2 c. buttermilk
Cook on medium heat until dissolved, remove from heat and add
1 tsp. baking soda
1 tsp. vanilla
I made this recipe exactly as stated. I think I will tweak it a little next time. I want to try to just use eggs whites - for at least 2 of the eggs.
